𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:

★ 1 cup quinoa
★ 2 cups water or chicken broth
★ 1 lb chicken breast, diced
★ 2 tablespoons olive oil
★ 1 chipotle pepper in adobo sauce, minced
★ 1 teaspoon ground cumin
★ 1 teaspoon smoked paprika
★ 1 teaspoon garlic powder
★ 1 teaspoon onion powder
★ 1 red bell pepper, diced
★ 1 can black beans, drained and rinsed
★ 1 cup corn kernels (fresh, canned, or frozen)
★ 1 avocado, diced
★ 1/4 cup fresh cilantro, chopped
★ Juice of 1 lime
★ Salt and pepper to taste

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀:

❶ Rinse quinoa thoroughly in a fine-mesh strainer. In a medium saucepan, bring water or chicken broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed.
❷ In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
❸ Add minced chipotle pepper, cumin, smoked paprika, garlic powder, and onion powder to the skillet. Stir to coat the chicken evenly with the spices.
