𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
★ 2 tablespoons olive oil
★ 1 onion, finely chopped
★ 1 red bell pepper, diced
★ 1 green bell pepper, diced
★ 2 celery stalks, chopped
★ 3 garlic cloves, minced
★ 200g chorizo, sliced
★ 2 boneless, skinless chicken breasts, cut into bite-sized pieces
★ 1 teaspoon smoked paprika
★ 1 teaspoon dried thyme
★ 1 teaspoon dried oregano
★ 1/2 teaspoon cayenne pepper
★ 400g canned diced tomatoes
★ 1 cup long-grain rice
★ 2 cups chicken stock
★ Salt and pepper to taste
★ 2 green onions, chopped (for garnish)
★ Fresh parsley, chopped (for garnish)
𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀:
❶ Heat the olive oil in a large pot over medium heat. Add the onion, bell peppers, and celery, and sauté until softened, about 5 minutes.
❷ Add the garlic and chorizo, and cook for another 2-3 minutes until the chorizo starts to brown.
❸ Add the chicken pieces and cook until browned on all sides, about 5 minutes.
❹ Stir in the smoked paprika, thyme, oregano, and cayenne pepper. Cook for 1-2 minutes until fragrant.
❺ Add the diced tomatoes, rice, and chicken stock. Stir to combine and bring to a boil.
❻ Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
❼ Season with salt and pepper to taste.
❽ Garnish with chopped green onions and parsley before serving.
